Aaloo began ki sabzi( potato with brinjal curry)
Ingredients:
Potatoes                                2 medium  size 
Began ( brinjal)                     1 big 
Oil                                            2 dish spoon 
Ginger garlic paste               2 teaspoons 
Green chillies chopped        2 to 3 
Rai dana                                  1 pinch
Methi dana                              1 pinch 
Kalonji                                      1 pinch 
Haldi                                         1/2 teaspoon 
Red chilli powder                    1 teaspoon 
Salt                                             as per taste 
Chicken cube                           1 only
Tomatoes (chopped)             2 medium size 
Freshly chopped coriander   2 tablespoons 
Dry fenugreek(sukhi methi)  1 tablespoon 
Water                                         1&1/2 cups
Method:
               Cut brinjal in cubes form and soak in salty water for 1/2 an hour. Cut potatoes also in cubes form and dip in water. 
              Now heat up oil in pan, add ginger garlic paste with chopped green chillies along with rai , methi dana and kalonji. Fry few minutes, then add chopped tomatoes with haldi, red chilli powder,  salt and cube .cover and cook on medium flame for 2 to 3 minutes. Remove cover and fry masala on high flame till oil release. Now add potatoes and began and fry for 4 to 5 minutes on medium flame. Now add hot water. Cover and cook on slow flame till potatoes tender. Then add sukhi methi with freshly chopped coriander. Mix and cook for 2 minutes. Then enjoy  with roti or rice 😋😋
